Guacamole that is Super Bowl Worthy

Guacamole is not just chopped up avocados. I have the very best recipe that is sure to please your Super Bowl guests and have them begging for more. No party is complete at our house without serving up a big ‘ol bowl. Just be warned that it is very addictive and you will consume massive amounts of calories, but it is so worth it!

 

1/3 cup of finely diced white onions or scallion including some of the greens

1/4 cup chopped cilantro (we add more)

2 medium tomatoes, seeded and finely diced

1 to 2 serrano chiles finely diced or you can substitute jalapeno peppers

Salt to taste

3 large avocados,preferably HASS

Juice of 1 to 2 limes

1-2 cloves of garlic (optional) but mandatory in our house

Set aside a few tablespoons of the onion,cilantro and tomato for garnish. Grind or chop the remaining onion,cilantro and chile with 1/2 tsp salt to make a rough paste. Peel and mash the avocado with a fork. Add the onion mixture and tomatoes and season with lime juice and salt to taste.

If you are not serving the guacamole right away, press a piece of plastic wrap directly on the surface to keep it from browning. To serve, heap the guacamole into a bowl and garnish with the reserved onion,cilantro and tomato.

Serve with tortilla chips

Makes about 2 cups

Serves 6 to 8
