I was not blessed with a cooking gene. I don’t like it, never have and probably never will. I do have a few go to recipes for various social events that I rely on because they are so easy that I can’t even mess them up. This is one of my mother-in-law’s favorites and she is the one that gave it to me, probably because she didn’t want her son to starve when we first got married!
Here are the ingredients. You just chop it all up mix it in the same bowl.
1 head of romaine lettuce (iceberg is OK but tastes better with romaine)
1 large tomato
3 chopped green onions
1 can pinto beans (drained)
1 bag of crushed corn chips (your kids will love to do the crushing)
2 cups shredded sharp cheese
Optional (1 pound of ground beef or veggie crumbles) for a main course
Catalina or French dressing (we love the Brianna brand Zesty French or Chipoltle Cheddar)
Allow people to serve their own dressing and corn chips because tastes vary and then the leftovers won’t be soggy,assuming you will have any left over!
You can vary the type of beans and use fat free dressing to reduce the calories.
Whew, all this cooking talk is making me dizzy. I think I will go put on something blingy!
